MIXING these two fruits together makes a delicious jam and it doesn’t take long to prepare.
But make sure you still follow the basic rules of jam making which means choosing the right type of pan, using clean and rinsed dry jars, don’t over-boil the jam and add additional pectin (and/or lemon juice) to certain soft fruits.
A really old farmhouse recipe book (often found in charity shops or even free at the Amenity Site) gives some of the best advice. They knew what they were talking about.
INGREDIENTS:
1kg strawberries
900g jam sugar
gooseberries (if possible wild)
METHOD:
• heat gooseberries in water to soften skins
• add strawberries and boil hard for 10 mins
• add a good spoonful of butter to make it smooth
